Breakfast Showdown: Giveaway Style

As you probably know Wild Harvest was a sponsor for the Healthy Living Summit in Boston. {at the end of this post you can check out all of my recaps of HLS} One of the awesome opportunities they gave the people attending was they gave them each a box filled with 10 of their products. 12 - 4

The Goal: Create a recipe using at least 3 of them. It was called Wild Harvest Breakfast Showdown! Friendly competition with your fellow Healthy Living Bloggers. If you remember I made Granola Bars.  They were pretty much delicious! (:

Well recently Wild Harvest contacted me to offer a giveaway on my blog and of course I couldn’t say no to that! I mean these products are awesome and well at HLS they were awesome! They even sponsored a yummy breakfast and announced the winner of the showdown!

Well I wanted to do something fun for this giveaway then just be like oh hey guys comment below and then tweet and blah blah blah! So what did I do? I had a breakfast showdown myself! (: I picked two recipes!
Mindy’s Individual Protein-Packed Quiches
and
Amy’s Black bean and Mango Salsa Omelet

Recreating both recipes were a lot of fun! Lets go through each one.
Starting with Mindy’s

Ingredients:
1 egg
1 tbsp plain Greek Yogurt
1 tbsp Unsweetened Almond Milk
1 tbsp Wild Harvest Black Beans
3 Wild Harvest Animal Crackers, Crushed
a dash of Wild Harvest Cayenne Pepper
a dash of Black Pepper

First crush the animal crackers!

Grease a muffin pan.

Wisk together the egg, milk, and greek yogurt.
Add in the cayenne and black pepper to your preference {I went a little overboard}

Pour the egg into the muffin plan. Add the black beans.

Cook for 10 minutes at 350 degrees.
Poke with a fork.

Add animal crackers on top and put it back in the oven for 15 minutes.
Top with salsa and eat!

Ingredients:
1/2 cup Wild Harvest Black Beans
1/4 cup Wild Harvest Mango Peach Salsa
1/4 tsp Wild Harvest Cayenne Pepper
1/2 cup Greek Yogurt
2 Eggs

Crack two eggs in a bowl, and whisk until blended.
Add in the Greek Yogurt, and whisk until mixed.

Sprinkle in the 1/4 tsp Cayenne Pepper

Heat up a skillet and place the egg mixture inside.

When it starts to bubble add the black beans.
For some reason my omelette didn’t turn into omelette form. Definitely my fault. I don’t know what I did. So I mixed it all together and made it into scrambled eggs.

When it was done I topped it with salsa but if you go to Amy’s link above you can see how hers turned out! (:

Here I was left with two awesome meals now it was time to taste test them!

As you are probably thinking “Danielle they both have the same ingredients they can’t taste tooooo much different” and well they didn’t. They were just different textures. It was fun though to try two different recipes that had the same ingredients and see how you can make them in two different forms.

I called my mom upstairs and had her taste them as well. She said she would give them both 4 stars! They were both very yummy! She said if she had to pick one of them she would pick Mindy’s because it was spicy but also sweet. {Which I added a lot of cayenne pepper in that one by accident} I thought they were both awesome and the same. I couldn’t decide!

I’m happy I did it this way though and had fun with this giveaway that I am about to share with you all! (:

Actually, trying those animal cookies wouldn’t be a bad idea. A lot of them on the shelves contain HFCS and stuff… ick!

I’ve loved every Wild Harvest product I’ve ever tried (seriously!), but I have to agree with the people who said animal crackers. Those things are so addictively amazing.

Also, I love the idea behind this showdown. :-) So much fun.
