Wow was it ever a long day of work. Glad that is over with…
After work I went to the grocery store to grab some food to eat this week.
Then I made some Crab Quesadillas… the recipe I made was alright I based it off of Courtney’s.
Things You Need:
(1) 8oz Can Crab Meat, drained
2 oz 0% Plain Chobani Greek Yogurt
1 cup shredded cheese {I used half fat free mozzarella and half of a fat free mexican mix}
1/4 cup Green Pepper
4 Whole Wheat Tortillas
Directions:
Combine all ingredients together in a bowl
Lay Tortillas and spread 1/4 of the filling on half of each tortilla.
Fold tortillas in half, gently pressing them together.
Heat a large skillet over medium heat and spray with nonstick cooking spray. Place 2 quesadillas in the pan and cook, turning once, until golden brown on each side- about 3-4 minutes total. Spray with pan again and repeat.
As you can see above I added some Greek Yogurt on top. {duh}
My recipe made 3 quesadillas. There was a little bit of extra which I’m excited about because I get to put it on my salad for lunch tomorrow! (:
My recipe wasn’t the best though. Courtney added more stuff but I was just keeping it easy.
