This week I made all 3 meals. Unlike last week when I made breakfast everyday instead of everything on Sunday.
This is what I am eating this week:

Now lets get into how I meal prepped.
1, 8 oz package of Full Fat Cream Cheese
1/4 tsp Pepper
1/4 cup Parmesan Cheese
1/2 cup Pizza Sauce
1 1/2 cups Mozzarella Cheese
2 cups Quinoa
1 cup Kale
2 cups Baby Carrots
3 cups Water
2 tbsp. Olive Oil
2 Honey Crisp Apples
1 cup Oatmeal
1 tsp Cinnamon
1/4 tsp Nutmeg
1/2 cup chopped Walnuts
1 1/2 cups Almond Milk
1 tsp Vanilla
1 1/2 tbsp. Maple Syrup
I started with lunch since it was a crockpot meal. I put the quinoa, kale, baby carrots, water and olive oil into the crockpot and then put it on high for 3 hours. Easy peasy!
Next up was dinner. I combined the cream cheese, eggs, pepper and parmesan cheese together in a bowl with a mixer. I added that into a greased 9×13 pan. I put it in the oven at 350 degrees for 12 minutes. Once that was done, I let it cool for another 10 minutes before putting the pizza sauce, cheese and toppings (mushrooms and ham) on top. I put it back in the oven for 10 more minutes and that was finished.
Last up was breakfast. I started by coring the 2 apples. Thank goodness we have an apple corer because I think this could’ve been really hard without one. I combined oatmeal, cinnamon, nutmeg, walnuts, almond milk, vanilla and maple syrup in a bowl. I put the apples in an 8×8 pan and filled the core with the oatmeal mixture. I put the rest of the oatmeal in the pan around the apples. Next, I put the pan in the oven at 350 degrees. I checked it after 35 minutes but it still wasn’t finished, you should be able to poke the apples with a knife and it should go through. It took about 50 minutes to be completely cooked.
I ended up with 4 breakfasts, 5 lunches and 4 dinners. Perfect week!
