MIMM Pumpkin French Toast

My Monday didn’t start out Marvelous. Sunday night football went WAYYYYY late and I didn’t get out of work until 1 AM but now my Monday is Marvelous! I have today off and a pretty busy day. A meeting for the Lupus Loop coming up in just 2 weeks, lunch with Grimm, my car gets inspected {hopefully it doesn’t cost me a fortune that wouldn’t be marvelous} and then I have to go to a late CrossFit which kind of stinks because I am definitely a morning workout girl but all I wanted to do was sleep in today!

Since it is Marvelous Monday thanks to Katie!!!! I am going to share with you an awesome recipe I made yesterday for breakfast!

Pumpkin French Toast

Cook Time: 10

Ingredients (serves 4, 2 pieces)

  • 2 large eggs
  • 1/4 cup canned pure pumpkin puree
  • 1/4 cup milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 Tablespoon granulated sugar
  • 8 slices of bread

Instructions

1. Combine eggs, pumpkin, milk, sugar, nutmeg and cinnamon with a whisk.

2. Heat a pan on the stove. Spray with nonstick spray.

3. Quickly dip bread on both sides into the egg mixture.

4. Heat 2-3 minutes on each side, until lightly browned. Repeat with remaining bread.
5. Serve.

Mmmm… this sort of reminds me of the Elvis PB french toast I made a while ago. I want to combine the two and have pumpkin PB toast now! :)

I could totally go for french toast right now! I haven’t had that in ages. I feel like I almost forgot they existed LOL They remind me of my childhood days when my Mom made them for us before going to school! :)
