Roasted Vegetables

Today I finally knocked two things off of my to do list!
I made Roasted Vegetables and used Coconut Oil! I’m pretty excited about it! I’ve been trying to learn to cook more paleo which always uses coconut oil I feel like. So I sucked it up… forgot the price… and picked some up at the grocery store yesterday.

When I saw this oil on other blogs I thought it was more of like a creamy oil but surprisingly it was HARD! Like I had to take my tablespoon and really dig into it to get some! i was very surprised!

I’m cooking dinner tonight and actually decided to get some work done on it early because I might want to eat some of the veggies for a snack in between lunch and dinner. (:

I got some Brussels sprouts {we all know i’ve been loving them lately} and carrots!

For the Brussels Sprouts I combined them in a bowl with a 1 tablespoon of coconut oil, 1 tsp of salt and pepper.

For the Carrots I combined them in a bowl with 1 tablespoon of Virgin Olive Oil, 1 tsp of salt and pepper.

I put them in the oven at 400 degrees for 40 minutes…

While that was cooking I marinated my salmon for tonight! Can’t wait to share with you that experience haha.

In no time the veggies were done and soft! I can’t wait to eat some once they cool off a little! (:
I feel like I’m going to eat more oil tonight for dinner than actual food haha.

Questions: Have you ever used coconut oil? Have you ever roasted veggies?

I have been using coconut oil for quite a while now but sometimes I forget about it. Have NOT used it with roasted veggies so thanks for this great looking idea. Glad you have discovered coconut oil too.

I love me some coconut oil. I use it for everything..even moisturizing my face! I’ve been seeing that there’s also a spray coconut oil floating around in stores, but I haven’t been able to find it yet!

I love roasted veggies. My faves are sweet potatoes with red onion, and brussels sprouts. I also like roasted asparagus. I’ve never cooked with coconut oil, I usually use olive. However, Ive used coconut oil to make homemade deodorant.

you can use it for deodorant? I think its weird that you can eat it… put it on your face.. use it as deodorant haha.. I’ll have to try roasted asparagus that sounds delicious!

I LOVE roasted veggies. I started making them once I moved out and now it’s the only way I prepare my veggies. Veggies always taste better roasted!

Those look so amazing!! Roasted brussel sprouts are my favorite for sure! I need to try them w coconut oil!!

How did they turn out? I probably missed this in another post because now I’m jumping around to catch up, haha. I’ve been thinking of buying some for a while, but I’m not sure I’ll like it.
