Roasted Vegetables

Today I finally knocked two things off of my to do list!
I made Roasted Vegetables and used Coconut Oil! I’m pretty excited about it! I’ve been trying to learn to cook more paleo which always uses coconut oil I feel like. So I sucked it up… forgot the price… and picked some up at the grocery store yesterday.

When I saw this oil on other blogs I thought it was more of like a creamy oil but surprisingly it was HARD! Like I had to take my tablespoon and really dig into it to get some! i was very surprised!

I’m cooking dinner tonight and actually decided to get some work done on it early because I might want to eat some of the veggies for a snack in between lunch and dinner. (:

I got some Brussels sprouts {we all know i’ve been loving them lately} and carrots!

For the Brussels Sprouts I combined them in a bowl with a 1 tablespoon of coconut oil, 1 tsp of salt and pepper.

For the Carrots I combined them in a bowl with 1 tablespoon of Virgin Olive Oil, 1 tsp of salt and pepper.

I put them in the oven at 400 degrees for 40 minutes…

While that was cooking I marinated my salmon for tonight! Can’t wait to share with you that experience haha.

In no time the veggies were done and soft! I can’t wait to eat some once they cool off a little! (:
I feel like I’m going to eat more oil tonight for dinner than actual food haha.
