Stuffed Green Pepper Casserole

It’s Wednesday and I had some different eats yesterday so I thought I would participate this week! (: Plus a recipe comes at the end that you will want to check out!
Breakfast:

Breakfast was my usual. Chobani Vanilla Chocolate Chunk… banana… and some health nut mix that I got from my foodie penpal with some blueberry coffee.

Snack:

I had a couple of these Peanut Butter Apple cookies One before lunch… the other after lunch… they are addicting! If you haven’t checked out the recipe yet you definitely should.

Lunch:

For lunch I tried something new. I wanted to do something with my apples since I still have about 8 pounds left haha. So I turned to Pinterest and found this cute little recipe.

Apple Peanut Butter with granola in the middle sandwich. It was pretty easy. Decore the apple cut it in pieces put peanut butter on each side some granola on one of them and then sandwich them together. It was delicious. A lot better than a ham and cheese on bread. :P

Dinner:

On Monday Eric made dinner. Yesterday we had leftovers. Just a warning this meal is definitely not healthy {but honestly what recipes lately have I posted on here that actually are?… not many}

Stuffed Green Pepper Casserole

Prep Time: 20 min

Cook Time: 25 min

Ingredients

  • 2 packages of Rice Sides Creamy Chicken Rice
  • 1 Onion
  • 3 Green Peppers
  • 1 lb of Hamburger
  • 1 can of Marinara Sauce

Instructions

1. Cut off top of Green Pepper. Clean out the inside. Dice up the Green Pepper.

2. Dice up the onion.
3. Cook rice on stove as the package says.

4. Put Hamburger on the stove and cook it.
5. Put Green Pepper and Onion in a pan and cook it.

6. Combine Meat with Green Peppers and Onions.
7. Add Marinara Sauce {as much as you want} and rice {drained} in the mixture on the stove.

8. Add Some Cheese. {as much as you want}
9. Put into Casserole dish.
10. Add more Cheese. {as much as you want}
11. Bake at 425 for 20 minutes.

It was really good. Eric did a great job. I even started in the kitchen to take some pictures for my blog but he kicked me out at the beginning but still took pictures… {someone wants to be famous :P }
He made this creation up all on his own. He should cook more often ;)

Oh that casserole looks yummy!!! And I have never seen an apple sandwich!!! Cute! Yes my hubby cooks most of the time! I HATE to cook but love to eat! Our deal is that he cooks and I clean! My favorite thing he cooks…taco soup! Yum!

mmm taco soup sounds good! Eric has a couple of meals he makes.. and will maybe cook once every two weeks but I’ll take whatever he gives me haha.

I love stuffed peppers! That’s one of my boyfriend’s favorite recipes to prepare too =) It must be a man thing! I love your apple sandwich idea- I love apples and peanut butter and I can always eat more granola ;) Cooking is so much more fun when you get to experiment!

I find a lot of recipe inspiration off of Pinterest but I can’t say I’ve actually followed any of the recipes that I’ve found.

My dad cooks sometimes. When I was younger he would always make us cream of wheat in the winter. So good! Just add some sugar and milk and it tasted like Magic :)
