I have come up with a morning routine that well I don’t know is the best idea haha but it works for me…most days.
I wake up, check facebook, gmail, outlook e-mail, twitter, and google reader {I don’t read any blogs though just look at how many I have to look forward to}.
Then I finally get out of bed, let the dogs out, and make breakfast. I bring the breakfast {oatmeal, Chobani, half of a banana and some granola} to bed as I set up my little blogging area.
Then I dig in to the 30 some posts to read {30 is fun… really!} as I munch on my food and sip on my coffee. Once 8:52 AM hits I get a text from Eric on his first break. This is nice for a couple of reasons. I get to say good morning, I get human interaction, and that means #RetroMTV is going to start any minute which lately means The Hills and LC! (:
I then decide to blog myself if I don’t have one lined up ahead of time or write some e-mails for the morning.
A couple hours usually pass now and by 11 am I am ready to get off my butt and head outside or downstairs to do some exercise. Sometimes this is bad because by 11 am it is hot and muggy but most days it works. That is where I will pick up the rest of my day.
Workout:
Today I had a mission… It was to have a better finish time on my 3 mile run then I did earlier this week. A 10 minute mile just wasn’t cutting it for me and honestly if that’s where I am at then I need to pick it up a notch. I didn’t want to run around my neighborhood though so I looked up some trails that other people run.
I found one in downtown Lancaster it was only a 1.5 mile loop so I had to run it twice but to me that was better then doing the same loop I have been doing.

I was moving! I was happy with my finish time: 28:36 that is a 9:32 average mile. Now that is what i’m talking about. That is where I feel like I am at. I don’t think I am fast at all but I at least want to be able to improve. I have been running for awhile now I shouldn’t be running 10 minute miles… anytime! I walked some before I started running. I think this helped loosen my legs. They were actually pretty sore from my Wello workout yesterday {I’ll update you on that next week}. I tried to keep a pace of a half a mile per song I listend to. Knowing I was right on track really helped. After the run though, I was gross.

Disgusting is probably a better word. {that even describes how much of a hot mess I look in this picture haha} It was only 81 degrees outside but it was muggy!

One thing I have noticed a lot lately is that I actually sweat a lot more after I run. Like my body is still working hardcore even when I’m just standing there or walking.
After my workout I drove home, ate some Chobani,

and got ready for my day before making lunch for me dinner for Eric.

Recipe Time:
Stuffed Peppers with Tuna and Quinoa
Servings: 2
Ingredients:

1 pouch (6 oz.) StarKist® Chunk Light Tuna in Water
2 green peppers
1/2 tbsp. Olive Oil
1/4 tsp. oregano
1/2 tsp. parsley
{I got to use my plants… finally}

{out of control}
1/2 cup raw quinoa (cooked with 1 cup of water)
Salt and pepper
1 cup cheddar cheese
Directions:
Preheat oven to 350°F.

Cut tops off the peppers and clean out the interiors.

Slice the top of the pepper around the stem (discard the stem) and cut the pepper into small dices.
Heat olive oil in large skillet over medium heat.

Stir in peppers, until soft, about 5 minutes.

Add oregano and parsley.

In a bowl add all ingredients in the pan, salt and pepper, tuna and quinoa.

Mix to blend well.

Stuff peppers with mixture.
Place in pan.
Bake for 15 minutes.
Top with cheese and bake for 5 additional minutes to melt the cheese.
It was pretty delicious. I didn’t put cheese on mine but I told Eric to make it that way.

I topped mine with some plain Chobani. {of course} I also added the extra inside goodies to my salad tonight for dinner.

Sounds like you had a nice run! I love it when I’m able to increase my pace – such a huge sense of accomplishment.
