It is another edition of What I Ate Wednesday! Thanks to Jenn at Peas and Crayons for the linkup!

I’ve been switching up some of my meals. I know don’t be surprised. I have been sticking to the same meals everyday for awhile now. After going to Barnes and Noble the other day I picked out their ONE AND ONLY paleo book for meal ideas. One I found was with eggs.

I started by putting broccoli, green pepper and sun dried tomatoes into a pan and heated them up. After they were warm and toasty I added eggs and scrambled them up. I love those sun dried tomatoes they add a kick to the meals.

Of course another breakfast I have been eating is my usual. I actually have been trying to cut back on greek yogurt. I know it is hard to believe but I have been trying to keep it to one serving a day. My usual breakfast is chobani, banana and granola!

I have been very hungry lately too! Like 6 meals a day hungry. An hour after I eat breakfast I’m already starving. There are two meals I have been snacking on lately after breakfast. One is a banana with almond butter and granola. {almost paleo}

I picked up some Nature’s Promise Banana Nut granola at the grocery store this week. It is really good!

Another usual snack: pretzel sticks.

I’ve also been snacking on blueberries! They were buy one get one free at the grocery store this week. Definitely can’t pass that up!

For lunch on Monday I had just a sweet potato with almond butter but yesterday I had leftover dinner from Monday night: Lasagna.

I love my moms lasagna. The next lasagna I want to make though is crockpot lasagna. I see it on pinterest everywhere and I just want it already! I think it would be fun to try.

Dinner last night looked a lot like Monday’s breakfast. I mixed broccoli, green pepper, eggs and sweet potatoes. This was super yummy! I was mad though that I forgot to add my sundried tomatoes!

and that is my new eats this week. Aren’t you guys proud of me? Well… you probably should be! (:

I seriously believe moms make the best lasagna’s. I can follow my moms recipe to the T, but for some reason it NEVER tastes as good.

I can’t get enough berries this week! Thankfully I buy a HUGE bag of frozen organic berry mix from BJ’s. Heating them up makes ‘em taste even better!

Oh my goodness I love sundried tomatoes – would certainly get me out of bed if I knew I had them to look forward to for breakfast. Dinner looks so tasty too :)

Yum!!! Love all your eats girl! I haven’t added sun-dried tomatoes to my eggs but that sounds like such a good idea! I made some salmon 2 days ago that is SO GOOD so I’ve been eating that up!

Your last night eats look really great!

The best meal I made this week was a huge crockpot of lentil soup. It’s so good!

LOL I Think my whole paleo world consists of eggs! No interesting meals this week – since time has been an issue, it’s been stick chicken in the crockpot and dump some salsa in and call it good. It comes out really well, though! :)

Mine consists of eggs and sweet potatoes haha. I need to find some other recipes that are just easy to make but I always just go to them. whoops!

Banana nut granola. Oh yum. I wish I could get that over here! And sun dried tomatoes just add the best flavour. I was so proud of myself this week for making a mean chicken curry with coconut milk.
