Today is Wednesday {finally} and that means it is What I Ate Wednesday!

A lot of new eats are in the mix today including my BREAKFAST! My breakfast seriously hasn’t changed in months! I decided to make myself a paleo meal that I found on pinterest!

It’s called Apple Bumpkin Bake. I was really surprised when the recipe called for apples, pumpkin, bananas and a dozen of eggs! To tell you the truth I don’t really like the texture but I topped it with some chocolate chunk chobani {not paleo anymore} and it was delicious that way! (: I paired that up with some coffee!

For my 10am snack I dug into the last of my Wild Harvest Cinnamon Sugar Pita Chips! Gosh I love them! They are seriously just so delicious! The perfect mix of sugar and cinnamon and pita chip! (:

For lunch I heated up leftovers from over the weekend of this seriously amazing recipe I got from Iowa Girl Eats. I pinned it forever ago but I never made it. So this weekend I figured was the moment and I’m so glad I did. This was the first time I ever had sundried tomatoes and they are awesome. Just the right amount of sweetness! The mac and cheese had noodles, chicken, broccoli, cheese and sun dried tomatoes. Definitely try this recipe!

3PM came fast and that is usually the time at work that I get hungry for something sweet. I always pack myself a treat. It could be anything from a piece of chocolate… to a cookie… to banana bread! I’ll take any of it!

Yesterday though it was a white chocolate chip macadamia cookie! My mom picked them up at the grocery store this week and they looked so good I couldn’t resist.

My mom decided to make dinner. I wasn’t complaining. It was definitely tasty too. I forgot to take a picture of mine though so I had to make another plate up for a picture. She made breaded pork chops, scalloped potatoes and Brussels sprouts {I ate the rest of those before the picture was snapped} It was very good!

What A great day of eats and they were different. I always feel like some of my meals are the same week after week but this week it was all about trying new things! (:

that apple bumpkin bake looks really interesting! i might have to try it out! i made some eggplant parm yesterday, and id never done that before! it turned out really good!! oh, and macadamia cookies are def my weakness!! haha have a great day!

I’m a big fan of sundried tomatoes. I would have them a lot more often if the hubby didn’t complain. :)

I’m lucky Eric didn’t complain that much! He just didn’t like the fat free cheese I used haha.

Thanks for trying out my recipe! Sorry you didn’t like the texture…I usually eat it cold and I know the texture is different once it’s refrigerated. We don’t have Chobani here but omg chocolate chunk sounds so good!!!
