Today is What I Ate Wednesday and Veggie Veggie Veggie Month! Fine by me.
Breakfast on Monday consisted of some Silk Almond milk, Corn Flakes and a banana. On Tuesday I switched things up and had a banana, Strawberry Chobani Greek Yogurt and my chocolate granola I got from Stephs Chocolate Party! Seriously that granola is so good. There are balls of fruit in chocolate and the granola is chocolaty! Perfect to start my morning!
Lunch on Monday was a Core Defense Bar. Yesterday I made this butternut squash casserole! Seriously soooo delicious! Eric and my mom aren’t to excited to try it but that’s fine with me I’ll eat it everyday! The squash makes the casserole taste a little sweeter. {Veggies Veggies Veggies}
My 3 PM snack has been a chocolate chip cookie! Yum! I just can’t get enough of these cookies every week. I wish I could!
Dinner has been the usual. A Sweet Potato with Justin’s Maple Almond Butter! Yummy Yummy! {veggies veggies veggies}
That has been pretty much my eats and will continue for the rest of the week until I’m out of casserole! (:

I always say to people OOOH IM SUCH A CARNIVORE!!!
but when I stopped and thought about it what Im really saying is I LOVE BEEF JERKEE.
I eat so so many many meatless meals.
I eat meatless for almost every meal unless I go out to eat! It’s so weird. I LOVE Justin’s Maple Almond butter on a sweet potato. Best. Combo. Ever!
We eat meatless a few times a week. No one even notices! I make a lot of bean and veggie dishes. I don’t branch out too much with sweet potatoes. I like ‘em plain with a smidgen of butter and cinnamon.
I eat a great deal of meat!
That is one thing I cannot give up. I like it all and so does my son. I have to try the almond milk… I haven’t yet.
I think I may be the only blogger out there who has never tried sweet potatoes & pb!
