This week I actually have different eats than usual {who is excitedddd?} sooooooooo I’m going to share them with you and a recipe in this weeks What I Ate Wednesday!

Oats in a Jar. I shared this with you guys yesterday in my post. My Wild Harvest peanut butter ran out so I put some oatmeal, banana, and Chobani vanilla chocolate chunk in it. Yummy! I forgot how much I love oatmeal!
Lunch:
After CrossFit I headed to the grocery store to get some Paleo options which included some Justin’s Almond Butter and Extra Virgin Olive Oil. {side note: I have been thinking about changing some of my meals over to Paleo.. obviously not all of them but I figure if I change one a day maybe it will become a lifestyle… more about this in another post sometime.}
I used them to make Paleo Pancakes!
Paleo Pancakes
Prep Time: 5 Min
Cook Time: 10 Min

Ingredients (2 Servings)
Pancakes
-
2 Ripe Bananas
-
1 Egg
-
2 tablespoons of Almond Butter
Other Toppings
-
Vanilla Extract (or other flavoring extracts)

Stevia
-
Cinnamon
-
Chocolate Chips
-
Cacao Powder
-
Pumpkin
Instructions
1. Mash the bananas in a bowl.![]()
2. Add the egg and almond butter.![]()
3. Mix until combined.
4. I also opted to add cinnamon and a little vanilla extract.
5. Heat olive oil in a frying pan over medium heat.
6. Once hot, use a 1/4 cup measuring cup to pour each pancake onto the frying pan.
These pancakes were delicious! I was actually surprised on how the ingredients turned into pancakes haha. I also enjoyed the almond butter… it is a great substitute for peanut butter. I tried to get my mom to try it but she said she would turn into a caveman. haha. what support! haha.

Pumpkin Oatmeal Cookies! yummmm! they are soooooo good! Definitely the second best cookie I have made so far this fall. {Soft Pumpkin Chocolate Chip comes in first!} I had like 4 of these they are that good! I’ll share the recipe with you guys tomorrow!

I bought this a couple of weeks ago at the grocery store because I had a coupon and I know how much Eric lovessss Chicken Fettuccini Alfredo. I guess I could’ve made it myself instead of having processed food but sometimes you need a quick and easy meal and that is exactly what we needed yesterday! Both of our schedules got busy during dinner time. Eric came home we both took a quick nap because we were beat and then I had to get up make dinner and I left to run and Eric left to umpire. ![]()
It was soooo quick and easy. You put it on the stove, cover it and let it cook for 10 minutes with some stirring. It doesn’t get much easier than that!![]()
The only downfall about this bag of food it didn’t have enough. I made it for my mom, Eric and I. The good thing was I wasn’t that hungry because I had my pancakes at like 2 pm and then I was snacking on cookies and I had to make dinner at 5 pm so Eric could eat before leaving. So I had about half a cup and split the rest between my mom and Eric. I also made some garlic bread that we had in the freezer. It was good though!
For a snack in between running and my softball game I had another cookie and then another one when I got home from softball! (: I’m going to turn into a cookie monster!

I love making my paleo pancakes like that but usually put the almond butter on top! I’ll have to try mixing it in next time! Those look great

Wow, I didn’t know you could make pancakes that easy! Definitely making these. I’ve been eating a paleo style diet, but I haven’t been very strict, I’m trying to do better! My boyfriend lost 20 lbs without trying just from cutting granola, cereal, bread, and pasta.

Those pancakes look yummy! I’m always amazed at what you can do without flour. The first time I made something similar to your recipe, I thought it would be really eggy and drippy. Not so!

I have thought about going paleo, but I love all the things that aren’t allowed: bread, pasta, chickpeas, peanuts, and dairy!
ME TOO! I’m not going to be perfect because honestly I love chobani.. and sometimes bread.. so even little changes are good changes! (:
I’ve never found those frozen bagged meals to have more than two servings in them, even the family sized ones. I use them more as a side dish than a main meal.
