WIAW: Veggiefied

It is Wednesday and this Wednesday for What I Ate Wednesday we are going Green. Thanks to Jenn for the linkup!

My breakfast I’m not even going to bore you with the picture. It has been back to the usual: Chobani {banana is my new favorite since my store took my chocolate chunk out of the mix} a banana and granola!

smoothie

After CrossFit I’ve been making myself a protein smoothie! Honestly I never liked the idea of a smoothie. 1. I think it is a lot of calories. 2. I would rather eat my snack then drink it. I have come to love them though. I realized that I’m always hungry so having a smoothie that benefits my recovery and helps boost my muscles in between breakfast and lunch is perfect! It holds me over and it is something I can look forward to after my workout! Oh PS: My smoothies consist of Designer Whey White Chocolate Protein, a banana, almond butter, almond milk and ice cubes!

lunch

Lunch: Veggies, veggies, veggies. I’ve been using my left over spinach mix that I had to stuff my pork chops with and combining it with carrots, Brussels sprouts and some sweet potato! Seriously so good!

Snack: Earlier this week I saw Andrea post an oat with protein powder picture on instagram! So of course I asked her what was in it and I made it. It is so delicious. It is healthy, it gives me some more protein in the middle of my day and its amazingly good! It is also no bake so extremely easy to make!

dinner

Dinner: On Monday I made Chicken Fajitas by putting chicken, red and green bell peppers and onion in the crockpot with some chicken broth. I combined it with some more left over veggies that I put together Sunday night so that I would have some healthy eat options! As you can see my meals have been very veggiefied. I’m trying very hard to really think about what I’m eating. {even though I am still a sucker for all things dessert.}

I’ve been hooked on a buffalo chicken crockpot recipe from Emily bites. Basically it’s a bottle frank’s buffalo sauce, 1 packet of ranch mix, and 3lb chicken. Throw into crockpot for 7-9 hours then shred. So good!

yum! buffalo chicken sounds awesome. Eric doesn’t like spicy foods though… even just a little.. sometimes he can be so lame! :P

My boyfriend is the Crockpot user in our relationship, and he makes a mean Crockpot Turkey Chili. Those M&M eggs are so cute! I’ve been stocking up on Easter candy for baskets for the kiddos, but haven’t seen those yet!

We have not pulled the crock pot out at all this year. I was planning on making something today but my husband surprised me last night with chili so I will have leftovers tonight.

I’m cleaning up my diet this week and making some changes to my workouts. I’ve got new goals to reach.

I take it you’re feeling PREEEETTTYYY regular these days! LMFAOOOO!!!!!

I have never used a crock pot before in my life but I have heard good things! I don’t even know where I would start with one of those. I am not so much a stew kind of person though.

Chobani bowls have always been a staple in my mornings as well, you just cant go wrong with them! I love making oat/protein powder creations because they keep me so full and are so simple to put together.
